My original plan for this post was to share my thoroughly thought out Easter menu to feed a crowd. Things change. So today, I wanted to share how we’ll be celebrating Easter on Sunday morning.
The weather has been so nice and I’m hoping it is on Sunday as well. I’m planning to set up our outdoor deck and enjoy the Easter morning outside. Sipping my coffee next to the lush dogwood trees. We have a TV outside, so we’ll probably watch our church service online on the deck, too.
The most common Easter menu item has got to be ham, right? I bought one on my weekly grocery trip on Sunday, but my hubby couldn’t wait until Sunday to dig in. I went ahead and sliced it up into portions so we could create different meals with it all week.
With church being on TV, we get out of church earlier than noon. I’m planning to make an Easter brunch for us. The menu isn’t firm, but here are my ideas.
Shrimp and Grits — I found some shrimp frozen in the freezer. I could easily cube the ham, render the fat, add some veggies, sautee the shrimp and top over grits. Grits are my favorite carb.
Omelet — My hubby is all about protein so an omelet is an easy way to satisfy that full protein desire. Add some ham, whatever leftover veggies we have and some cheese and we’re good to go.
Pancakes — I love pancakes. Growing up, any time my mom had plans and my dad had to cook supper for us, it was pancakes. This is a cheap, easy meal.
Grits, Eggs, Bacon — If all else fails, I’ll make a pot of grits, scramble some eggs, and add ham or bacon. It’s a well rounded meal that we never get tired of. We eat this a lot for breakfast for dinner.
Ham Delights — I made these yesterday for my hubby. It’s one of his favorite things. Ham Delights are a southern stable; they show up at tailgates, engagement parties, supper clubs and, very often, my kitchen table. How can you resist ham covered in swiss and a gooey sauce of Worcestershire, mustard, caramelized onions and poppy seeds.
Hmmm thinking of other ways we could use this huge ham….add to a box of jambalaya…make a quiche…a ham and grilled cheese sandwich…ham biscuits…ham mac and cheese…
How will you be marking this special day? I loved seeing all the palms on front doors for Palm Sunday. I missed the memo and will try to make an Easter cross with some greenery from the front yard to put on our door.
I may set a special table for two or I may set our tv trays with fancy china for us to eat off of while we watch church on television. No matter how we celebrate, He is Risen! Our plans may change, but nothing changes about Jesus. His steadfast love endures forever.
