I’m going to share my special, fancy grilled cheese recipe with you today. Using Callie’s specialty jams and cheeses, this is the best grilled cheese you’ve ever put in your mouth. Yes, Callie’s has way more than biscuits, and these items are delicacies in their own right!

Ingredients
- bread (although I may have to try this on a biscuit soon)
- cooked bacon
- Callie’s Pimento Cheese (I might also need to try these with the spicy pimento cheese soon, too)
- Blackberry Jam or Strawberry Fig Jam (I used the Strawberry Fig from their limited release previously this year because I had some that needed to be used, but I love the Blackberry Jam, too!)
- arugula and spinach (you can use whatever greens you have on hand, I find these wilt well on the sandwich)
- butter
Instructions
- warm up your pan. I like to have mine on medium.
- butter your outside bread pieces
- on the inside bread pieces, spread pimento cheese and jam
- place the pieces in the pan
- on the pimento cheese, layer slices of bacon
- on the jam, lay some arugula and spinach
- cover with lid. I find this helps the greens wilt a little
- bring both pieces together in a sandwich
- slice diagonally on your plate for ultimate enjoyment

Y’all! I am telling you! This is amazing! The pimento cheese has a bit of pepper-y-ness to it, not spicy, but pepper-y. The saltiness of the bacon with that and then the sweetness of the jam—oh you need these ingredients!!
