This is the final installment for the Girls Gameday Brunch and I’m sharing the menu! You can read the previous posts here and here. These are classic recipes, but I altered them to work in a crock pot; I think these will be so nice for the upcoming holidays and hosting!

Spinach and Sausage Asiago Grits Casserole

I adapted this from a Southern Living recipe found here. I do a few things slightly different and altered it to go in the crock pot.

Crockpot Buffet at the Girls Gameday Brunch

Here’s my recipe for Spinach and Sausage Asiago Grits Casserole.

  • half a bag of fresh spinach
  • 1 16 oz. package of ground pork sausage
  • 2 cups of chicken broth (I used reduced sodium because there’s plenty of saltiness in the sausage)
  • 1 cup heavy cream
  • 1/2 tsp. salt
  • 1 cup of uncooked grits
  • 1 cup of Asiago shredded cheese (I actually just shred this and eyeball if it’s a cup or not; too much cheese can’t be bad, ha)
  • 1/4 tsp of black pepper
  • 1 cup of shredded white cheddar (I have used a block of extra sharp cheddar if in a pinch, too)
  • 3 eggs, beaten

Instructions:

  • cook the sausage and drain the fat; set aside
  • shred the cheeses and keep in separate piles but ready to go
  • beat your eggs and put in a large bowl ready to go
  • wilt the spinach and set aside. drain if it’s very watery.
  • cook the grits by bringing the broth and cream to a boil. Once boiling, add in the grits and constantly stir so that it doesn’t get clumpy. These will be very thick.
  • once the grits are cooked and thick, add in the cup of asiago and 3/4 cup of the white cheddar. it will be super thick! Stir will so that it’s all incorporated.
  • in the large bowl with the eggs, add just a spoonful of the grits mixture and stir quickly to temper the eggs. repeat again. the trick is to do a little at a time and stir quickly so you don’t get scrambled eggs. eventually, get all the grits in the big bowl.
  • fold in the sausage.
  • fold in the spinach.
  • place in a crock pot (or pyrex) and cover with the remaining cheddar chees.
  • cook in the crock pot on high for 2.5 hours or in the oven on 350 for about 50 minutes.

Classic Breakfast Casserole

Breakfast casserole is life! My mother made this for us all the time and it’s so easy to alter how you need to. Here’s how I make it:

  • cube bread (whatever kind you want) into one inch cubes and place in the bottom of a crock pot or pyrex
  • sprinkle cooked ground sausage on top
  • sprinkle about a cup of shredded cheddar cheese on top (or any type of cheese)
  • pour in a mixture of eggs and cream (I usually do about 6 eggs and whatever cream I have leftover, ha)
  • you can prep ahead and let sit overnight which really allows the bread to soak up the egg mixture and be super fluffy
  • cook in oven on 375 for about 45 minutes or in crock pot on high for about 2.5 hours

You can absolutely leave out the bread to make it carb free or gluten free. Or use gluten free bread. You can leave out cheese or cream to make it dairy free. If you want to add some veggies, you can do it! It’s so easy and soo good!

Cinnamon Rolls and Glaze

I used this recipe to make the cinnamon rolls. I am not a baker and I used gluten free flour; these did not rise, but they sure tasted good!

To add a special spin of the glaze, I used Jackson Morgan Whipped Orange Cream liquer! Y’all this was sooo easy and such a special treat! All you do is mix the Jackson Morgan with powdered sugar until you get the desired consistency. I wanted mine extra “glaze-y” and extra “orange-y” so I added just a splash of orange juice. It totally took the cinnamon rolls to the next level! I’ve been brainstorming what else can I add a boozey glaze to–cakes, waffles….so many sweets!

The coffee bar wouldn’t be complete without a pot of my special ocassion coffee by Southern Belle Coffee. The Porch Swings and Praline flavor is my favorite because it pairs well with plain cream but the pumpkin spice cream took it to the next level! I bought several bags to have for the holidays and when I’m hosting guests. It’s the extra special touch for hosting.

The mimosa bar is so easy but I also added Fauxmosa; it’s my new favorite nonalcoholic specialty drink!
